Carignan - Cabernet Sauvignon - Cabernet Franc

Winemaker’s Notes

This is a playful blend of distinctive fruits and noble woods, which together make this singular wine. It arose as a unique, special blend, without any ambition other than to represent our efforts. The varieties which achieve the greatest expression in the Maule Valley are here. The secret is that each year the valley expresses itself in a different way, so the blend is an edition limited to each harvest.

The grapes of our own production were manually harvested and selected, ready for 24-hour cold maceration. The fermentation took place with selected yeast in stainless steel tanks at 26º C. Then the wine underwent malolactic fermentation in 400-litre French barrels and 5.000-litre casks, where in matured for between twelve and fourteen months.

Cellaring Recommendations: Six to eight years.

Deep ruby red in colour, this wine is expressive, fruity and elegant on the nose with notes of fresh red fruit, violets and wild herbs. It is vibrant in the mouth and has soft tannins and an oily mid-palate. It displays notes of cherries and hints of roast.

Serving Suggestion

njoy this wine with any type of meat, especially a well-seasoned cut of barbecued red meat. It is also an excellent complement for strong and creamy types of cheese. Best served at between 16º C and 18º C.
