Sauvignon Vin de Pays d’Oc
The Vin de Pays D’Oc Sauvignon Blanc is grown on the lower elevations of the vineyard. Harvesting is done in the cool of the early morning to avoid oxidation and the fermentation is done at cool temperatures with some skin contact before the grapes are pressed. The wine rests in contact with its lees for several months and bottling is done in the early spring. These techniques produce a wine that is aromatic, intense and fresh.
Pale yellow color with light green reflections. Interesting duality between varietal aromas of boxwood flowers and exotic aromas such as lychee and passion fruit. This wine is thin, yet dense, with a long finish.
Its moderate acidity it pairs well as an aperitif with smoked salmon or trout eggs. It is a nice complement to fish, such as cuttlefish and shrimps. Its aromatic intensity will allow it to support aromatic dishes, as well as exotic Asian flavours.
